I visit Manchester regularly, on business. Where in Manchester, especially at night would I go to 'tooth'

Try Manchester Picadilly train station, esp. at peak hours, pref. when there's track/train problems. Even a casual walk through there reveals an amazing number of toothers, usually get 10+ on any given day.
